So you guys know that I am pretty much in love with regular ol’ peanut butter. Put it on my toast, crackers, spoon, finger… I love it. I crave it. I need it. And then I discovered natural peanut butter, which is literally just peanuts. WORDS CANNOT EXPLAIN. It is just… mouthgasm. And then I found out I could make almond butter with my food processor. It is magic on a spoon. And I love it au-naturel. Just roasted to give it even more nutty flavour and it is divine. Well friends, let me introduce you to honey roasted peanut butter. 

It’s almond butter’s baby sister that wants all the attention with it’s sweetness and charm.

Creamy, roasted peanuts with the surprise crunch from the caramelized roasted honey.

I made this for Chris’ birthday last month, and both 4 oz jars disappeared very very quickly. And he doesn’t even like peanut butter that much.

Seriously. This stuff is like crack on your toast.

Now if you’ve never made nut butter in your food processor before, don’t worry. It’s super easy, and all you have to do is dump whatever type of nuts you want made into butter into your food processor. Process until you get smooth butter. It takes about 10 minutes, but I like to do it for an extra minute or two to get that extra creaminess.

On a completely unrelated note, I haven’t really posted much about my workouts since my vegan green tea cupcakes post, but I would like to proudly announce that after consistent exercise since the end of May, I’ve shed 4 lbs, gained a ton of muscle, and I fit very comfortably in almost all of my clothes. (I say almost all because although I lost a good chunk of fat from my thighs, the muscle has replaced it and it still makes my pants a lil’ tight). My girls have shrunk a little bit too, which is a little disappointing because I already don’t have much there. Sigh.

BUT the best thing is that I HAVE A BUTT! Not a flat, little, asian butt. BUT A CURVY BUTT. I’ve never really had much of a rear end, my back just kind of turns into my legs. And to be perfectly honest, I have been looking forward to having a mass that keeps my pants up for once. Two months of squats, lunges, and jumping jacks have shaped my butt into existence! I’m clearly way too excited about this, but hey, I’m allowed to be confident about my body.

Honey Roasted Peanut Butter
 
Ingredients
  • - 2 cups honey roasted peanuts (or you can be super fancy and roast your own peanuts)
Instructions
  1. In a food processor, blitz the peanuts for about 15 minutes until smooth or whatever consistency you desire. Because of the honey, it will take a little longer for them to become smooth. Your peanut butter will be warm, even hot, by the time it reaches the smooth stage. Heat + peanuts = oil release, which yields peanut butter and not tiny peanut pieces =P
  2. Keeps for about 2 weeks in the fridge (if it even lasts uneaten for that long!)
  3. Enjoy on toast, over oatmeal, in sandwiches, on crackers, or with a spoon ;)

    Would it work with maple syrup or agave? mmmmmmm. i like roasted peanut butter…im afraid i will finish the peanut butter in less than 2 weeks. have you tried the cookie butter? its insanely delish!

      I’ve never tried roasting peanuts with maple syrup or agave but I don’t see why it wouldn’t delicious! I haven’t tried cookie butter yet, I don’t really think it’s very prominent in Canada. Let me know how it works out!

    I could eat peanut butter by the spoonful, and I love honey-roasted peanuts… what a great idea to make peanut butter from the roasted peanuts! I’ll be trying this soon, yum!!!

      Oh no! I hope your leg heals up soon. Broken leg/foot is the worst, you don’t realize how much you use em until you are seriously inconvenienced with a cast!

    Love the post – I buy honey roasted peanut butter at our farmer’s market, but maybe I’ll just do it myself next time (my Mom told me recently the machines they use can harbor bacteria if not kept clean, though I do trust this particular market…) – But I LOVE the part about loving your body – You GO girl! I have SO far to go, but I am working on loving my body no matter what as well :)
