So you guys know that I am pretty much in love with regular ol’ peanut butter. Put it on my toast, crackers, spoon, finger… I love it. I crave it. I need it. And then I discovered natural peanut butter, which is literally just peanuts. WORDS CANNOT EXPLAIN. It is just… mouthgasm. And then I found out I could makeÂ almond butterÂ with my food processor.Â It is magic on a spoon. And I love it au-naturel. Just roasted to give it even more nutty flavour and it is divine. Well friends, let me introduce you to honey roasted peanut butter.Â
It’s almond butter’s baby sister that wants all the attention with it’s sweetness and charm.

I made this for Chris’ birthday last month, and both 4 oz jars disappeared very very quickly. And he doesn’t even like peanut butter that much.
Seriously. This stuff is like crack on your toast.
Now if you’ve never made nut butter in your food processor before, don’t worry. It’s super easy, and all you have to do is dump whatever type of nuts you want made into butter into your food processor. Process until you get smooth butter. It takes about 10 minutes, but I like to do it for an extra minute or two to get that extra creaminess.
On a completely unrelated note, I haven’t really posted much about my workouts since my vegan green tea cupcakes post, but I would like to proudly announce that after consistent exercise since the end of May, I’ve shed 4 lbs, gained a ton of muscle, and I fit very comfortably in almost all of my clothes. (I say almost all because although I lost a good chunk of fat from my thighs, the muscle has replaced it and it still makes my pants a lil’ tight). My girls have shrunk a little bit too, which is a little disappointing because I already don’t have much there. Sigh.
BUT the best thing is that I HAVE A BUTT! Not a flat, little, asian butt. BUT A CURVY BUTT. I’ve never really had much of a rear end, my back just kind of turns into my legs. And to be perfectly honest, I have been looking forward to having a mass that keeps my pants up for once. Two months of squats, lunges, and jumping jacks have shaped my butt into existence! I’m clearly way too excited about this, but hey, I’m allowed to be confident about my body.
Anyway, that’s enough of me being vain. I hope you enjoy this peanut butter, and that you’ll attempt to make your own!
- - 2 cups honey roasted peanuts (or you can be super fancy and roast your own peanuts)
- In a food processor, blitz the peanuts for about 15 minutes until smooth or whatever consistency you desire. Because of the honey, it will take a little longer for them to become smooth. Your peanut butter will be warm, even hot, by the time it reaches the smooth stage. Heat + peanuts = oil release, which yields peanut butter and not tiny peanut pieces =P
- Keeps for about 2 weeks in the fridge (if it even lasts uneaten for that long!)
- Enjoy on toast, over oatmeal, in sandwiches, on crackers, or with a spoon ;)
