I’m in the big city now! It’s so weird, I never thought I’d ever be moving to Toronto. I only ever knew Chinatown (I know, typical asian), and I never really liked the feel of the city. I grew to really love Ottawa and its small town feel despite it’s large size. I knew where to find great fresh produce and I knew what days had the student deals. I guess I’ll have to adjust and explore the tastes and new finds of Toronto, but I will probably need your help! Meanwhile, I’ll stick to what I know: Chinatown.
This smoothie is inspired by the smoothies that Uma Thurman’s character in the TV seriesÂ SmashÂ LOVES. She’s kind of obsessed with it, and I can totally see why. It’s super healthy, actually pretty tasty despite the kale, and is vegan! I’ve noticed lately that my body gets mad at me when I have any dairy. My allergies are worse when I have dairy too. I think I love cheese too much to completely cut out dairy from my diet, but I think I’ll substitute coconut milk or almond milk when I can.
These smoothies are really creamy and rich from the coconut milk, and with the flax meal and the kale, it has kind of a thicker texture. The agave nectar is there just to make it not taste like garbage, but you can always leave out the agave if you’re trying to cut the sweeteners from your diet.
Other things you can add to this for a bit of extra protein are those whey powders or even some peanut butter. I think that would be pretty delicious, though you might have to add more coconut milk so it’s not so thick. I highly suggest being generous with the kale because raw kale is SO unbelievably good for you it’s unreal. So many vitamins! - 3-4 stalks of kale, washed and de-stemmed
- 1 cup of coconut milk
- 2 tbsp of ground flax seed (flax meal)
- agave nectar to taste (i used about 1-2 tsps)
- 3-4 ice cubes
- Blend kale, coconut milk, ice cubes, agave nectar and flax meal together until the ice and kale are appropriately small sized.
- Taste and add agave nectar as needed.
- Omnomnom vitamins.
