3ripe heirloom tomatoesor regular tomatoes, washed and diced
1cupdiced fresh pineappledon't use the canned stuff
1/2jalapeñodeseeded and minced (if you like it a little spicier, add the whole pepper minus the seeds, or add the seeds if you're a daredevil)
1/4cupchopped fresh parsleyI used leaves from about 4 sprigs
1/2tspsaltor to taste if you like it salter
2tspolive oil
Instructions
Combine all ingredients and gently mix together. Let sit in the fridge for about an hour to to let the flavours marry together, but if you're hungry, it's great fresh as well. Serve with tortilla chips, and enjoy!
