Banana Chocolate Chunk Muffins

Ingredients

  • 1 tbsp flax meal + 3 tbsp warm water
  • 1/3 cup 70 g vegetable oil
  • 3/4 cup 105 g brown sugar
  • 3 medium-large bananas 275 g, well-mashed
  • 1 tsp 4 g vanilla extract
  • 1 tsp 3 g baking powder
  • 1 tsp 6 g baking soda
  • 1/2 tsp 2.5 g salt
  • 2 tsp 4 g ground cinnamon
  • 1 1/2 cup 210 g all-purpose flour
  • 1/2 cup 100 g chocolate chunks

Instructions

  • Preheat oven to 350F.
  • In a large bowl, combine flax meal and water. Let stand until thickened.
  • Add vegetable oil, sugar, mashed bananas and vanilla extract, and mix until incorporated.
  • Sift in baking powder, baking soda, salt, cinnamon and flour. Stir until just combined. Fold in chocolate chunks.
  • Divide batter between a lined muffin tin. Bake for 13-15 minutes until a toothpick or cake tester comes out clean when poked through the middle. The edges should be golden and top domed. Remove from tin within a few minutes and let cool on a wire rack.
