I’m half asleep as I write this, but I still am somehow energetic with the residual solar energy from the Sun today and recharging with nature. This past weekend I went hiking up and around the Collingwood Scenic Caves. I was wowed by nature over and over again at the different rock formations and the amazing view from the side of the mountain. There’s something so mesmerizing of seeing an ocean of green trees, pastures, and farms.
On Saturday, I also went to visit some horse stables, and there they had so many dogs, cats, and even a baby racoon! I was so overwhelmed by my new furry friends that I didn’t even get an allergic reaction (unheard for me). It basically made me realize that I want to live on a farm eventually with my own space for my dogs to run around and my future children to play in the dirt without the danger of finding broken class or needles in the sand (thanks a lot, city parks)
I made these vegan herbed butters for Produce Made Simple this week. There are three in total (as you can see from the photos), but my personal favourite butter of the three (Chipotle Cilantro Lime butter) is there, while my notoriously picky cousin liked the jalapeño one more. Have you tried to make your own herbed butters before? It’s a great way to get rid of those leftover herbs. You can spread these butters on freshly grilled corn, over toast, or anywhere butter is acceptable.

Herbed Butters: Jalapeño Lime and Garlic Dill
Ingredients
For the jalapeño lime butter:
- 1/4 cup unsalted vegan butter
- 1 tbsp chopped jalapeño seeds and inner pith removed
- 1/2 tsp lime juice
- 1/2 tsp kosher salt
For the Garlic Dill butter
- 1/4 cup unsalted butter
- 1 tbsp chopped dill weed
- 1/2 tsp lemon juice
- 1 clove garlic minced
- 1/2 tsp kosher salt
Instructions
- To make either butter in a food processor, first blitz the butter until creamy. Add the herbs and spices (and some of the salt) and continue blitzing until mixture is uniform. Taste test and adjust salt as needed.
