I think it’s funny when people think that it’s only vegans and vegetarians who eat tofu. I’ve grown up eating tofu so many different ways:Â pan-fried with lemongrass, fried and juicy in a sour tamarind soup, soft and silky in a savory tomato broth soup, and silken in dessert form with a ginger syrup. My love for tofu is infinite, especially in grilled form. It’s simply pressed, marinated, and grilled to adorn a bowl of soba noodles and blanched spinach and peas. You can add your own greens, your own veggies, and heck, you can even use a different dressing, but for the recipe, you’ll have to visit my good friend Katie from Produce on Parade. She did a guest post for me mushroom soup, so I decided to return the favour with this grilled tofu soba noodle bowl with greens.
I know it seems like I’ve been doing a lot of soba noodle posts, but I bought this massive box of soba noodles that were just so good I just wanted to keep eating them in different ways haha. Don’t worry, I’ve got a rice noodle soup coming up next. NOODLES FOREVER.

That grilled tofu is so beautiful! I love those dark grill marks.

Thanks Cadry =) They were hard to perfect, but it’s a trick of lower heat, and resisting the urge to check haha
Can’t EVER go wrong with soba and tofu. Yes, more noodles recipe please!
