How many of you actually eat breakfast? I’m not talking about a coffee-and-donuts breakfast, but something nutritious with some fibre to kick start your day? I definitely don’t do it enough. If anything, I am the worst at eating breakfast, although breakfast food is probably my favourite type of food. Take these smashed peas and eggs on toast for example. It is an amazingly simple and filling breakfast, plus the edamame beans and peas are chock full of fibre and plant-based protein.
My roommate was remarking at how now that we’re older, we’re finally appreciating food based on brightness and colour, whereas during our younger years, the more golden-brown-deep-fried, the more delicious. The smashed peas are a beautiful, vibrant green that is brightened with a splash of lemon juice. That’s the secret: lemon juice it makes go from meh to YUM. Add the velvety smoothness of goat cheese, and Â the tangy rye toast, which is lower on the glycemic index (not by much, but it is). Now you could stop there with the toast and smashed peas if you’re vegan (omit the goat cheese in that case) or you don’t like eggs, but if that’s not the case…there’s nothing quite like a freshly, fried egg with a sunny, runny yolk.
I’m slowly and not really intentionally moving towards a vegan lifestyle. Ever since I cut out/limited my dairy intake, my body has felt SO much better, and my allergies have actually become less severe. I’m eating more leafy greens and nuts to get my calcium and iron, and the bright fruits and veggies are making me really appreciate the colours on my plate. The more colourful food is, the tastier it is.
Dairy hasn’t been that much of a problem for me to stop eating (aside from cheese, but I haven’t been eating much lately since I realized so many cheeses have animal rennet in them. Like parmesan!!! I’m so upset.)
But eggs are hard to stop eating.
I heart eggs. I devour Egg McMuffins (no meat, of course). I wolf down fried eggs. I LOVE eggs benedict. I demolish salted eggs in Vietnamese congee. I adore the soft-boiled eggs in ramen noodles.
It’s ridiculous how much I love eggs.
So I advocate the vegan lifestyle and support those who choose it.

- - 1 cup frozen sweet peas
- - 1 cup frozen edamame
- - juice from a lemon (I used half the lemon, but you may choose to use more or less)
- - 2 heaping tbsp goat cheese
- - 1 tbsp olive oil
- - salt and pepper to taste
- - 4 slices of bread
- - 4 eggs, fried (either over easy, poached, or fried)
- In boiling water, cook the edamame for about a minute, then add the frozen peas. Continue to cook for another 3 minutes (or according to the package)
- Drain, and add to a food processor along with the goat cheese, lemon juice, olive oil, salt, and pepper. Process until it reaches your desired consistency (I preferred more of a chunky paste, but if you like it more homogenous, continue pulsing)
- Toast the bread slices, then add the pea mixture.
- Top with a fried egg and serve! A tasty breakfast full of fibre, flavour, and protein!
