My first experience of guacamole was when I was 21, and I went to NYC and experienced Chipotle for the very first time. At the time, I thought that Chipotle was the best of the best of burritos (spoiler alert: in 2020, Eddie, the original Burrito Boy, is a firm believer in Fat Bastard Burritos).
Although there are several chains that have superior burritos, Chipotle has my favourite guacamole from all the fast food burrito chains (even if they charge you extra for it, which is always disappointing).
As a result, I’ve based this recipe on what I like about Chipotle guacamole: garlicy goodness, lots of avocado, fresh cilantro and plenty of lime.
Guacamole
Ingredients
- 3 ripe avocados
- 1/2 cup finely diced red onion
- 1 lime juiced
- Half a jalapeno finely chopped
- 2 cloves garlic minced
- 1/2 cup cilantro finely chopped
- Salt to taste
Instructions
- First, cut the avocados in half, and spoon out into a food processor. Add all the other ingredients.
- Put the mixture into the food processor and pulse it until the desired consistency.
- Serve and enjoy!
